Yield: 2 - 3 servings

You'll need

  • 2 tablespoons Todo Verde Carnitas Seasoning

  • 12oz king oyster mushrooms

  • 1/3 cup neutral cooking oil

  • 1 cup mixed greens

  • 2 cups black rice, cooked

  • 1/3 cup cashew crema

  • ⅓ cup pico de gallo

Instructions

  1. Run a regular kitchen fork down the stem of mushrooms to create a broken down, shredded texture. Collect shreds in a mixing bowl.

  2. Shake Carnitas seasoning tin to evenly mix flavor. Add two tablespoons Carnitas seasoning to your mushrooms, stirring to coat.

  3. Preheat a skillet with 1/4 cup neutral cooking oil to medium heat.

  4. Add seasoned mushrooms to skillet, cooking in batches to not overcrowd skillet. Allow mushrooms to cook until crispy and seared, to your desired level of doneness.

  5. Remove from heat and pat excess oil from mushrooms.

  6. Add to bowl with mixed greens, black rice, cashew crema, and pico de gallo. Provecho!
